Stew Chicken Ricipe

Ingredients

¼ cup brown sugar
2 tablespoons ketchup
½ teaspoon ground black pepper
I tablespoon vegetable oil
I teaspoon chopped onions
3 tablespoon of chopped onions
1 tablespoon butter
3 tablespoons fresh cilantro
1 teaspoon minced garlic
1 cup water
1 teaspoon salt
1 (4pound) whole chicken, cut into pieces

Instructions:

Place chicken into plate, Sprinkle cilantro, garlic, onion, salt and pepper over it. Cover and marinate for 30 minutes. Heat the vegetable oil in a deep pot over medium heat. Stir in sugar an cook until the sugar has melted into a nice golden brown  syrup. Add the chicken pieces, and brown quickly while turning continuously. Cover the pot, and let it cook for 2 minutes 3. Pour in 1 cup water. Replace the lid, and cook over medium heat for 10 minutes. Stir in ketchup and butter. Continue cooking until chicken is fork tender, 20 to 30 minutes. Taste and season with additional salt and pepper if needed. Serve chicken with the sauce
in the pot as gravy.

Paratha Roti Recipe

Ingredients

Paratha Roti 4 cups or 1lb.
Flour 4 teaspoon baking powder
1 teaspoon salt
1 ½ cups water (approximately)
1 ½ ounces or 3 tablespoons softened margarine or ghee
¼ cup or 2 ounces oil, for coating

Instructions:

1.Stir flour, add baking powder and salt. 2. Add enough water to form a smooth, soft dough 3.Knead well and leave to relax for ½ hour covered with a damp cloth. 4.After the dough has relaxed, re-knead and divide into four balls (loyah) 5. Flour surface and roll out dough to 8” or 9” circles as desired; spread with some margarine and sprinkle with a little flour. 6.Cut rolled from centre to edge, roll tightly into a cone, press peak of cone into centre and flatten; leave to rest for 30 minutes. 7.Sprinkle flour on surface and roll out dough very with a rolling pin. 8.Cook on moderately hot, greased baking stone (tawah), for a minute. Turn over and grease with oil; cook for 1 minute. 9.Turn over to the other side and brush with oil and cook for 1 minute. 10.Remove from heat and crush with a wooden palette or wrap in a clean towel and crush
